(With apologies to all vegetarians and vegans reading this...) Sam and I were shopping today and found some ground lamb at our little supermarket. It was unusual to see it there, and Sam loves lamb, so we bought it.

I decided to make Greek-style lamb burgers, so I made up the dough for some homemade whole grain pitas.

While the dough was rising, I thought, "What was I thinking? I need to pack for our trip, in addition to hundreds of other things that need to be done! I don't have time to make bread!" And so I wasn't going to. I just ignored it when it was done rising. Hmph. So there.

But then I walked by it...and I saw it...and I smelled it...and I touched it...and I can NOT resist the beauty and miracle that is bread dough. So I turned on the oven and started rolling out the pitas.

They took NO time at all.

When they were in the oven and puffed up (as in my photo below...isn't that COOL that that's what pitas DO in the OVEN?!!), I showed them to Sam. His sheer Joy and Delight at the fact that I had made pitas to go with our Greek lamb burgers was just beautiful. He said, "This is going to be the BEST dinner EVER!!" He joined Jake and I in the kitchen (Jake was making falafel for his vegetarian burgers) and made tzatziki sauce.

And to think I almost didn't make those pitas...
